Peking Duck of China
Peking duck dish originates from the place of Beijing from the late imperial era. The preparation of roasted duck was prevalent in China since many eras and older dynasties. Since then, the people of China have a fancy with that particular dish which they have been modifying to make it better.
Preparation
The roasting of the duck can be done in two methods - open oven style and closed oven style.
- The preparation starts with soaking it in the boiling water.
- Then it is glazed with a layer of maltose syrup.
- The second layer of soy sauce, five-spice powder and more maltose in and out.
- It is refrigerated for 24 hours before being roasted in the oven.
